SUPERFOOD SPOTLIGHT

With its reputation for toughness, you probably pass up this superstar for more tender-sounding baby spinach. Don't. Kale is rich in vitamins A, C, and K and is a great source of calcium. What's more, eating cruciferous veggies like kale may lower your cancer risk.

TRY: Chopping and drizzling it with olive oil, salt, and pepper, and baking it at 350°F for about 15 minutes to create kale "chips"--a crispy side you can eat with your fingers.
