There was a time when I had to convince people that seaweed was food for humans. In those days, we were called Maine Edible Seaweeds. Another company in Maine is called Maine Coast Sea Vegetables...as if to say, "Go ahead, eat seaweed just like you would eat vegetables, as in garden vegetables."

Sea vegetables are usually purchased dry and can be prepared in minutes: Lightly wipe the produce with a damp cloth, place it in a bowl, and cover with cool water until fully rehydrated, about two to ten minutes. Dried, powdered seaweeds are also available. They're wonderful shaken over warm grains, vegetables, or pasta dishes.
