A Diet Rich in Plant Foods Can Prevent Diseases


Science has shown us that Humans can live at least 150 years. But why are there so many people dying at the age of 60, 70, or 80? When they can live twice as long. How would you like to add an extra 50 years to your life? Think of all the things you can achieve with 50 extra years. Impossible? Let me tell you how the science of Nutrition Immunology can make it possible.

Nutrition Immunology
Nutritional Immunology studies the effect of nutrition on the human system. What type does nutrition does it study? Nutrition immunology looks at three types of nutrients. These are called:

1. Antioxidants
2. Phytochemicals
3. Polysaccharides

We can only get these nutrients if we eat a large variety plant foods everyday. Nutritional Immunology studies the types and species of plants with the most antioxidants, phytochemicals and polysaccharides. It studies the parts of the plants with the most nutrients. For example, if you are going to eat grapes, don’t throw away the seeds. They are rich in OPC (Oligomeric Proanthocyanidins), a very powerful antioxidant. And if you think Ginseng root is very powerful, I’ve got a surprise for you—the Ginseng Berry is every better.

Nutrition Immunology also studies the best age to harvest and the best way to process plants to stop nutrient loss. For example, mushrooms must be harvested when young but cactus is more nutritious when it is older; soy must be heated well, but cactus cannot be boiled.

Antioxidants, Phytochemicals, Polysaccharides

Let us look more closely at antioxidants, phytochemicals and polysaccharides.

Antioxidants help to delay aging. The risk for disease raises as you age. A diet rich in antioxidants can give a 50 year old an immune system of a 30 year old. Many different plant foods have high levels of antioxidants. Grape seeds and rose hips are examples. OPC, the antioxidant in grape seeds is 20 times more potent than vitamin C and 50 times more potent than vitamin E.

Phytochemicals help us to prevent all types of diseases. Phytochemicals in cactus help to heal wounds faster. Soy is very rich in phytochemicals that can lower cholesterol and suppress cancer. Ginseng berry’s phytochemicals fight obesity and diabetes.

Polysaccharides are long-chain sugars that prevent cancer or help existing cancer patients get better faster. [?] and mushrooms are rich in polysaccharides. Some good mushroom examples are:


Some people ask me, “Can you get all these nutrients from a vitamin bottle?” In order to be effective and well-absorbed by the body, these nutrients must be absorbed from wholesome plant foods. Yes, you might get anti-oxidants in multi-vitamins but these are not neutral antioxidants. They might have been extracted from plants by isolation that mixed them with a chemical or a drug.

The Human Immune System
The Human Immune System is the best doctor in the world. When the immune system is weak, we fall to illness easily and may take a long time to recover. But when the immune system is strong, we can resist illnesses without a sniffle. Now, let us take an amazing journey into the immune system. Are you ready? Let’s go.

The human immune system is not one specific organ, cell or biological substance. It cannot be found in one area of the body. Instead, the immune system is a complex collection of linked organs and cells all working together in releasing different chemicals at different times. The immune system is extremely complex but it’s so well coordinated that it cannot be copied by men or machine.

Think of the immune system as an army where different battalions come together using different weapons to fight enemies. The immune system works 24 hours a day to protect us from enemy invaders like bacteria, viruses, parasites, pollution and even our own dead cells.

Thymus and Bone Marrow
The Thymus and Bone Marrow are our main lymphoid organs. The Bone Marrow creates red and white blood cells. Red blood cells are our immune cells. Like an army of Infantry, Air Force, Navy, our Thymus trans-immune cells called T-cells to perform specific functions.

The immune system also consists of peripheral [?] organs like the tonsils, spleen, lymph nodes and appendix. For example, swollen nymph nodes under the arms ensure our immune cells are fighting infections.

Now, let us look at our very protective immune cells. These cells are immune cells that shoot specific missiles at invaders. These missiles are called antibodies or immuglobulins. In this animation of a bacterial invasion, these immune cells jump into action by releasing a bacteria specific antibody. This antibody locks into a bacteria and kills it.

Another interest in the immune cells is the macrophage. The macrophage is both a messenger and a fighter. When it sees enemy cells it will call other immune cells to the battlefield. It fights enemies by grabbing them and swallowing them. Look at this macrophage, see how it engulfs a dead blood cell and then returns to its normal shape.

There are also several types of T-Cells that join in the fight. One power T-cell is the or Natural Killer T cell (NKT—Natural Killer T cell). The NKT cell kills enemies by releasing certain chemicals. In this animation, the Natural Killer T (NKT) cell seeks and destroys the cancer cell.

So you see the immune system is highly intelligent. It works around the clock to protect us from deadly enemies. Without the immune system, we can die in a matter of ours.

Why Do People Get Diseases?
But why do people still get terrible diseases with such a strong army inside them? Today, it’s because they have a malfunctioning immune system. Most diseases are caused by a malfunctioning immune system. The immune system can malfunction in a number of ways.

* When the immune system is weak we get diseases like flu, hepatitis, infections and cancer.

* Another example is the self-attacking immune system. The immune system attacks our own body cells because it cannot differentiate between enemy cells and friendly ones. This causes autoimmune diseases like rheumatoid arthritis, multiple sclerosis.

Let us see some examples of a malfunctioning immune system. Rheumatoid arthritis is an autoimmune disease. Our immune system mistakes our joints as enemy cells and tries to destroy them.

Invaders can enter our bodies at any second. A cut in your tongue or a sting creates an opportunity for infection. Thankfully, our immune system is always working to protect us. Pollution and dusk create risk for lung cancer. The immune system prevents it, but when it becomes weak, cancer cells can start to grow. A diet rich in plant foods keep our arteries clear, for the immune cells to flow smoothly.

Many people ask me, “Do healthy foods make such a big difference?” Yes. Studies show that eating nutritious foods and exercising more helps to prevent at least 30% of cancers, 80% of heart disease, and 90% of diabetes.

NKT cells (Natural Killer T-Cells) seem to be essential for several aspects of immunity because their dysfunction or deficiency has been shown to lead to the development of autoimmune diseases (such as diabetes or atherosclerosis) and cancers. NKT cells have recently been implicated in the disease progression of human asthma.

What is the Cause of Illnesses and Diseases?

There are two basic causes to degenerative diseases: immune dysfunction due to toxicity & nutritional deficiency. Toxicity arises from agricultural chemicals poisoning our crops, food processing chemicals, and from medical and over-the-counter drugs. Deficiency arises from poor soil and depletion of nutrition in processed foods. As a result, the body's major defenses are weakened: the immune system, enzyme system, mineral balances, organs, and hormones. In mainstream medicine, symptoms of diseases are treated with drugs, further increasing the toxic damage, since all drugs are liver toxic.

Why Do Our Foods Have Very Little Nutritional Value?

Even if you are trying to eat the right variety of food (according to the definition of proper nutrition), it is almost impossible to get it from the foods that we are eating. Over 90% of the anti-cancer agents and immune system enhancers are missing from the foods we are eating. Either missing from the beginning because of the pressure on our farmers to produce high yields via commercial speed processing techniques, or they were lost by cooking or other processing. Even more scary, is that these nutrients could have been lost simply by not eating the foods immediately after harvest!


It’s bad enough that some processing techniques can destroy vital nutrients, however, not processing foods right away after harvesting also results in loss of vital nutrients, because we are removing from the source. Vegetables and fruits are alive and are still alive even after harvesting! As long as the cells of the vegetables and fruits are alive, they must continually consume vital organic nutrients stored within them in the metabolic process which keeps them alive. This is evidenced by the very fact that fruits keep ripening even after harvesting. While the fruit was still on the plant, used nutrients were continually being replaced by the plant, but now that it is no longer on the plant once harvested, it can easily lose up to 90% of the disease fighting nutrients and immune system enhancers. Keep in mind that we are not talking about carbohydrates, minerals, fats, and proteins that give a plain taste, but about vital disease fighting chemicals and immune system enhancers, namely phytochemicals, antioxidants, and polysaccharides. Is it any wonder why all types of diseases are on the rise? Antioxidants, phytochemicals and polysaccharides offer unlimited hope in the fight against chronic diseases. In fact, statistics show that at least one-third of cancers can be prevented if we eat a balanced diet and exercise often. Now that is food for thought.

If 90% seems rather high, please keep in mind that we are only talking about the disease fighting nutrients and immune system enhancers, not the carbohydrates, sugars, fats, and proteins that gives food most of its taste. The latter provide energy and building material for your body, but do little for helping the immune system fight illness or disease!
Still, 90% is a figure almost too big to comprehend; it is as if we were just making it up. Many people will not believe that this is true, and will even dismiss the figure as propaganda. But until they accept its reality, they are not going to get better. This is why the very first Vital Healing Step is Education. Education is the Key.

There are millions of phytochemicals and science has not even begun to name all of them. However, scientists have grouped the most common phytochemicals into four broad categories, namely indoles, isothiocyanates, flavonoids and isoflavones. Each plant also contains its own unique variety of phytochemicals. For example, indoles, one of the larger groups of phytochemicals, is available in vegetables such as cauliflower, broccoli, cabbage, and turnips.

Indoles-3-carbinol has been known to reduce risk of cancer, such as breast and ovarian cancer, by acting on a precursor to the female hormone estrogen and causing it to break down into a harmless form. Isothiocyanates comprise two groups: PEITC and sulforaphane. PEITC is found mainly in turnips and cabbage and is shown to inhibit lung cancer and prevent carcinogens from binding to DNA. Sulforaphane, contained in broccoli, cauliflower and cabbage, eliminates carcinogens in cells. Besides onions and sweet potatoes, flavonoids are also found in citrus fruits and many types of berries. Flavonoids have anti-cancer properties-they prevent cancer-causing hormones from attaching to normal cells. They also inhibit enzymes responsible for cancer cell metastasis. Isoflavones are found in soybeans. Soy isoflavones like genistein, daidzein and glycitein offer great disease resistance. Other than lowering serum cholesterol levels, they also reduce the probability of coronary heart disease as well as the risk of osteoporosis in postmenopausal women. While some plants are rich sources of a particular phytochemical, others contain myriads of phytochemicals. For example, a tomato-rich diet has been said to reduce DNA breakdown through oxidation by up to 40%. This is because tomatoes are bestowed with lycopene, a cancer-fighting phytochemical. The prickly pear cactus, in contrast, contains not one beneficial phytochemical but thousands. It cannot be repeated enough that a varied diet is very important for us to obtain as many varieties of phytochemicals as possible. Lack of these phytochemical nutrients such as thiamin B, riboflavin B, niacin B, folic acid, pantothenic acid, pyridoxine, biotin, cyanocobalamin and L-ascorbage are known to cause depression, anxiety, restlessness, forgetfulness, insomnia, and irritability. All these phytonutrients are easily destroyed when we don't consume food after harvesting.

Antioxidants are compounds that prevent cell damage through oxidations. These compounds neutralize free radicals. Free radicals are highly reactive and unstable molecules produced by cigarette smoke, toxic chemicals, excess sunlight and even our bodys own metabolic processes. These molecules can cause the mutation of proteins, membranes and even our own DNA, leading to cancer and other degenerative diseases like cataracts and heart disease. Antioxidants obtained from natural plant sources have been proven to seek out and "anti-oxidize" free radicals to prevent their destructive effect on the body. For those who think that popping an antioxidant pill is beneficial, here's news that may make you sit up. Thus far, there is no conclusive evidence to say that antioxidants in pill form can help prevent cancer or other diseases. For years, scientists have closely compared the use of antioxidants through supplements with that through the diet only to find that antioxidant pills could actually escalate risk of cancer. For example, 1994, The New England Journal of Medicine reported that artificial beta-carotene supplements actually increased occurrence of lung cancer among heavy smokers in Finland. Therefore, to lower risk of cancer, scientists advise obtaining antioxidants from natural sources such as wholesome plant foods. Oligomeric Proanthocyanidin, better known as OPC, is a powerful antioxidant found in pine bark and grape seeds. In fact, OPC is touted to have 20 times more antioxidant activity than vitamin C and 50 times for antioxidant activity than vitamin E. Rose, which is actually an edible flower, is also very rich in antioxidants. Ginseng berry and cactus fruit are two other rich sources of antioxidants. Recent studies have found ginseng berry to have 1.4 times more antioxidant activity than vitamin C and cactus fruit to have seven times more antioxidant activity than vitamin C. Lately, research has shown lycopene, a type of beta-carotene found in tomatoes, to have promising effects in fighting cancer.

Polysaccharides are long chains of sugars commonly found in some mushrooms. Research ha shown that mushroom polysaccharides can inhibit tumor growth by activating immune cells. Polysaccharides help to balance the immune system an enable it to destroy existing cancel cells and viruses. Polysaccharide-rich mushroom extracts are also used in anti-viral medication. In the 1960's, scientists discovered that polysaccharides possess anti-cancer properties. However, each type of polysaccharide has its own unique ability and healing effect on certain cancers. Among polysaccharide-rich mushrooms, the following five are most lauded for their anti-cancer and anti-viral properties. The agaricus blazel murill mushroom which helps to increase immune cell activity in the body. The coriolus versicolor mushroom which contains a beta-glucan which has been shown to have anti-microbial, anti-viral and anti-tumor properties most effective agents for treating chronic illnesses. The shiitake mushroom known to treat colds, flu, poor blood circulation, upset stomach and fatiuge. The maitake mushroom is beneficial to enhance the immune function as well as inhibit tumor growth. And last the danoderma lucidum mushroom is used during chemotherapy and radiotherapy to reduce side effects such as fatigue, appetite loss, hair loss, bone marrow suppression and infection and enhance quality of life.

There are three main types of disease fighting nutrients and immune system enhancers often missing from the foods we eat; phytochemicals, antioxidants, and polysaccharides. Given that these delicate, living, life-force nutrients are only present in plant foods in small quantities, in the first place, and that they are easily destroyed by heat and other processing techniques, it should not be surprising that we are not getting enough of them. In addition, fruits and vegetables start losing vital nutrients immediately after they are harvested because these fruits are still living. As long as the cells of the fruits remain alive, the fruit must continually consume and use the vital nutrients stored within it in order to stay alive. As a result, not only must plants be grown in the proper soil and harvested at the right time, they must be processed and/or eaten immediately after harvesting to maximize the amount of these disease-fighting agents we can obtain from them. Even if you purchase organically grown fruits and vegetables, it can sometimes take days for the food to get to your table. By that time, it is possible that they no longer contain any of the disease-fighting nutrients, (phytochemicals, antioxidants, and polysaccharides). It is almost impossible to get all the required nutrients we need from the fresh fruits and vegetables we are purchasing from supermarkets today. So now you're are probably also thinking about vitamins. Why don't we just supplement with vitamin supplements?

The Vitamin Pill Misconception

Many people take vitamin supplements on a daily basis thinking that they are getting their needed nutrition. Isolated nutrients often lose the overall benefit that the balanced nutrition of a whole plant can offer. To qualify as a healthy food, a plant or some portion of a plant must be used in its whole form. Our bodies need thousands of different types of nutrients, not just a few vitamins, like A, B, C, D, E, etc. Vitamin supplements appear to be a fast and efficient solution to make up for malnutrition, but new studies show that vitamins do not function independently - they are complex structures that work synergistically with other vitamins and nutrients found in the plants. Vitamins are present in all plant foods and are essential for good health; however, isolated vitamins are not healthy. What we are just now discovering is that isolated vitamins (nutrients in plants that are taken out and concentrated into pills) are not as beneficial as initially thought. In fact, vitamins that have been isolated away from the wholesome plant actually become toxic and will throw the body chemistry out of balance. Even if taking vitamin supplements was beneficial, would those few vitamins be enough to give our Immune System ample nutrition? Obviously not, because cancer and heart diseases are still major causes of death and are still on the rise. Inside each type of plant, there are literally thousands of vitamins, minerals, and phytochemicals that our bodies need. It is always best to eat wholesome foods and not isolated vitamins because there might be other nutrients inside plants that scientists have not discovered yet! We need the whole spectrum of nutrients from the plant, not just a few nutrients from it! Ask yourself, is my body so simple that just a few vitamin pills can keep you healthy? Obviously the answer is no, we need to get our nutrition from wholesome, organically grown plant foods!

Your Immune System doesn't need drugs. It needs the Nutrition that can only come from wholesome organically grown plant foods and herbs, grown, harvested, and processed, with strict adherence to the principles of Nutritional Immunology.

Nutritional Immunology
